1. A roofing system, comprising:
a plurality of panels configured to extend across a span between a series of adjacent rafters of a roof;
wherein at least a portion of the plurality of panels include solar panels, each solar panel comprising:
a plurality of side edges;
a core; and
a waterproofing layer applied over an upper surface of the core in an offset alignment so as to define at least two flanges projecting past at least two of the side edges of the solar panel and trailing edges spaced inwardly from at least two other side edges of the solar panel so as to define at least one inset portion along the upper surface of the core opposite each of the at least two flanges;
wherein each of the at least two flanges of the waterproofing layer is configured to lay substantially flat against a corresponding inset portion of an adjacent solar panel connected in series across the span between the adjacent rafters with a leading edge of each of the at least two flanges abutting a trailing edge of a waterproofing layer of the adjacent solar panel; and
at least one photovoltaic cell positioned along the core.
