1. An optical system for measuring a water-oil interface level from fluid thermal properties, the system comprising:
a single-mode optical fiber comprising a Fiber Bragg Grating (FBG),
a polytetrafluoroethylene (PTFE) tube configured to receive the single-mode optical fiber,
a connection, wherein the FBG is positioned in the connection,
a flange connected to the PTFE tube and configured to connect the optical system to a tank, reservoir, processing vessel, and/or storage vessel,
an optical connector configured to connect to an optical interrogator, wherein the optical interrogator is configured to receive signals from the FBG via the optical connector.
