1. A protein isolate having from 1 wt % to less than 3 wt. % of phytic acid by weight of proteins in said protein isolate, a purity of at least 85 wt. % (N×6.25) on a dry protein isolate and an albumin content of 90%-97% of the total protein content; wherein said protein isolate has a solubility in water at least superior, or equal, to 90% at pH 5 and at pH 7.
