1. A method of functionalizing an extracellular matrix of an organ or tissue of a mammal, the method comprising:
i. harvesting the organ or tissue;
ii. culturing the organ or tissue using media comprising a nutrient functionalized with a chemical group that is reactive in a biorthogonal chemical reaction; and
iii. decellularizing the organ or tissue to obtain a decellularized scaffold comprising the extracellular matrix functionalized with the chemical group that is reactive in the biorthogonal chemical reaction.
