1. A method for increasing hydrolytic enzyme activity in a barley grain during a malting process, comprising applying a photon energy to one or more barley seeds for a period of treatment during a germination step, wherein the period of treatment comprises nine pulses at 0.26 Hz of UV light at 3.4 s/pulse at the barley seed.
