1. A method for quantifying one or more peanut protein allergens in a composition, the method comprising:
contacting a composition comprising one or more peanut protein allergens with an aqueous extract medium to produce an aqueous peanut extract;
digesting the one or more peanut protein allergens present in the aqueous peanut extract to generate one or more peanut protein allergen digest products;
fragmenting the one or more peanut protein allergen digest products to generate peptide fragments;
analyzing the peptide fragments and/or the one or more peanut protein allergen digest products using a mass spectroscopic method to generate a peanut allergen signature; and
determining an amount of the one or more peanut protein allergens in the composition by comparing the peanut allergen signature to a calibration curve,
wherein the peanut allergen signature comprises allergen digest products from Ara h1, Ara h2, Ara h3 and Ara h6, and
wherein the one or more peanut protein allergens in the aqueous peanut extract is present at a concentration of less than about 2 μg/ml.
