1. A method for obtaining a flour comprising unicellular red algae (URA) biomass, said URA being selected from the genus Galdieria, the method comprising:
a) cultivating URA in a medium containing at least one lacteal permeate selected from milk permeate, whey permeate, buttermilk and mixtures thereof; the lacteal permeate comprising lactose as carbon source and organic acids selected from lactic acid and citric acid;
b) collecting the URA biomass from the medium of step a); and
c) processing the collected URA biomass into a flour;
wherein the lactose from lacteal permeate is at an initial concentration in the culture medium ranging between about 0.05 g/L and about 200 g/L; and the URA biomass produced has a URA density of between 20 and 200 g/L dry matter.
