1. An extruded starch composition comprising:
at least one starch, chemically modified starch, or mixtures thereof;
one or more water soluble polymers; and
optionally, water, with the starch composition being free of a polyol plasticizer, wherein
the one or more water soluble polymers are selected from the group consisting of polyvinyl acetate, polyvinyl alcohol, polyalkylene oxide having a molecular weight of at least 10,000 Da, or mixtures thereof,
the extruded starch composition has a peak cold viscosity of greater than about 700 mPa·s,
a final viscosity greater than about 300 mPa·s, and a ratio of the peak cold viscosity to the final viscosity of greater than or equal to about 1.0.
