1. A process for producing volatile organic acids from a biomass fermentation juice comprising potassium salts of said volatile organic acids, the process comprising the steps of:
a) fermentation of a biomass wherein the pH is controlled by addition of a base, the pH being between 5 to 9, to obtain a biomass fermentation broth;
b) separation of insoluble particles from the biomass fermentation broth of step a) to obtain a biomass fermentation juice;
c) addition of a strong acid to the fermentation juice of step b) until the pH is below 5 in order to form an acidified fermentation juice having a pH below 5 and to cause precipitation of a potassium salt mixture;
d) drying the acidified potassium salt mixture of step c) comprising the precipitated potassium salts and the acidified fermentation juice;
e) recovering evaporated organic acids by condensation of drying vapors of step d); and
f) recovering the dried potassium salts mixture of step d).
