1. A pastry cutter comprising:
a head, including:
a head enclosure with a cutter edge at a distal end for cutting dough;
a plurality of spikes for perforating the dough; and
a plurality of cleanout apertures for maintenance;
a dough pusher within the head, comprising:
a pusher plate;
a plurality of pusher rods extending from the pusher plate; and
a plurality of springs encircling the pusher rods;
a pusher retainer positioned within the head, aligned with the pusher rods; and
a handle detachably coupled to the head.
