A method of obtaining a canola seed oil comprising the step of extracting a canola seed oil from a genetically modified Brassica plant, said genetically modified Brassica plant being genetically modified to express a PUFA synthase system derived from a eukaryotic source, the canola seed oil comprising at least 0.01% docosahexaenoic acid (DHA), wherein said canola seed oil is of the intermediate or side products of gamma-linolenic acid (GLA; 18:3, n-6), stearidonic acid (STA or SDA; 18:4, n-3), dihomo-gamma-linolenic acid (DGLA or HGLA; 20:3, n-6), arachidonic acid (ARA, C20:4, n-6), and eicosatrienoic acid (ETA; 20:3, n-9), so long as such intermediate or side products are not naturally produced by the endogenous FAS system in the wild-type canola plant.
