1. An extruded food product, consisting of:
a corn protein isolate present in an amount ranging from 80 to 90 wt %, the corn protein isolate having a particle size ranging from more than 1 μm to less than 300 μm, and comprising:
(1) at least about 85 wt % corn protein on a dry basis;
(2) an “a*” color value ranging from about −0.6 to 1.5, and a “b*” color value ranging from about 10 to 25; and
(3) less than about 1.5% oil on a dry basis;
rice flour; and
optionally sodium bicarbonate;
wherein the extruded food product has a density ranging from about 40 g/L to about 80 g/L.
