1. A method for producing oleogel, the method comprising
providing a mixture comprising an oleogelator component other than ethylcellulose, and an oil component, and
sonicating the mixture with ultrasound and cooling the mixture from a first temperature wherein the mixture is in molten state to a second temperature wherein the oleogelator component in the mixture is at least partially in solid state and wherein crystallization of the oleogelator component is initiated,
wherein the ultrasound comprises one or more superpositions of ultrasound waves; frequency of the ultrasound is 0.5-20 MHZ; and the ultrasound is generated by a system comprising one or more transducing means emitting ultrasound comprising one or more superpositioned ultrasound waves; thereby forming oleogel comprising oriented crystals of the oleogelator component,
said method further comprising monitoring the one or more superpositions of ultrasound waves and controlling a desired pattern of said one or more superpositions of ultrasound waves during said cooling.
