1. A method of producing a soy protein concentrate having a specific lipid: protein weight ratio at about 0.010:1 to about 0.03:1 comprising:
a. screw-pressing or extruding soybean feedstock at above room temperature to form a mash and transferring the mash to a bioreactor;
b. optionally, adding one or more cellulose-degrading enzymes to release sugars into the mash in the bioreactor;
c. inoculating the enzyme treated or untreated mash with at least one microbes;
d. recovering proteins, cell mass from the at least one microbes, and exopolysaccharides from the incubated mash via filtration;
e. drying said recovered material,
wherein said soy protein concentrate comprises the proteins in an amount of at least about 70% by weight, the cell mass from the at least one microbes, and the exopolysaccharides, and wherein the protein content of the recovered material is greater than the protein content of the soybean feedstock of step (a).
