1. A rotary molding system configured to mold food products comprising:
a fill plate having an inlet surface and an outlet surface, the fill plate having at least one hole therethrough through which food product is configured to pass;
a support structure;
a cylindrical drum having an inner surface, an outer surface and mold cavities into which food product is configured to be received from the fill plate, the outer surface of the drum being proximate to the outlet surface of the fill plate; and
a platen mounted on the support structure and mounted within the drum, the platen being fixed in position relative to the support structure, the drum being rotatable relative to the platen and to the support structure, the platen having an inner surface and an outer surface, the outer surface being proximate to the inner surface of the drum, the platen comprising a body having holes therethrough, wherein a plurality of the holes are in communication with each mold cavity when each mold cavity passes between the fill plate and the platen, the platen providing a back surface of each mold cavity when each mold cavity is rotated into position over the platen, and wherein each mold cavity does not have a back surface when not in into position over the platen, the holes in the platen providing an air management system configured to allow air to escape each mold cavity as food product fills each mold cavity and displaces the air in each mold cavity without an application of a vacuum.
