1. A composition comprising a curcumin conjugated to a rice protein to form a curcuminoid-rice protein complex with a curcumin to rice protein ratio of is 1:1 (mg:g), or 1:≤10 (mg:g), or 10:≥1 (mg:g), or 25:1 (mg:g), or 1:50 (mg:g).
