1. An olive oil comprising a starting olive oil enriched with crystalized oleanolic acid (OA) characterized in that a concentration of the crystalized oleanolic acid in said starting olive oil, including the crystalized oleanolic acid formed as glycosylated derivatives and esters, is comprised between 580 and 650 mg/kg, wherein the starting olive oil is virgin olive oil, extra virgin olive oil, refined olive oil or mixtures thereof, wherein the crystalized OA comprises OA nanoparticles having a size between 90 and 300 nm at a concentration between 6000 and 6600 mg/kg, wherein the OA nanoparticles exist in a diluted volume ratio of a nanosuspension to the starting olive oil being between 1:7 and 1:15.
