1. A method for rating agave-derived beverages, comprising:
(a) assaying for monoamine oxidase (MAO) inhibitors in the presence of ethanol by adding MAO A and/or MAO B, alcohol dehydrogenase and nicotinamide adenine dinucleotide (NAD) to a sample of each of the beverages;
(b) assessing a level of inhibitory activity of the MAO inhibitors for each beverage based on results of the assaying; and
(c) assigning each beverage a position on a scale based on its level of inhibitory activity of the MAO inhibitors, wherein the MAO inhibitors are MAO A inhibitors or MAO B inhibitors or both, and wherein each assigned beverage comprises ethanol.
