1. A method of increasing endothelial nitric oxide production in a human before development of atherosclerosis comprising:
determining a first nitrite plasma concentration in the human;
administering to the human an effective amount of vitamin K2 for a period of less than 4 weeks at an amount of 150 to 500 μg/day; and
determining a second nitrite plasma concentration in the human after the period.
