1. A sous vide cooker comprising:
a housing extending along an longitudinal axis from an upper housing end to a lower housing end and comprising at least one display;
a bulkhead secured at the lower housing end and extending along the longitudinal axis from an upper bulkhead end to a lower bulkhead end, the bulkhead and housing forming a first cavity therebetween;
a skirt extending along the longitudinal axis from an upper skirt end to a lower skirt end located below the lower bulkhead end to form a second cavity between the skirt and the bulkhead, the skirt having one or more inlet openings and one or more outlet openings located below the lower bulkhead end;
an impeller located in the second cavity;
a motor operatively connected to the impeller;
a heating element located within the second cavity;
a metal heat sink located in the first cavity; and
a TRIAC physically attached in conductive thermal communication to the heat sink in the first cavity.
