A dairy product comprising a milk-based substrate and a peptide exhibiting beta-galactosidase enzyme activity, wherein the amino acid sequence of the peptide is selected from SEQ ID NO: 9, 10, 11, and 16, enzymatically active fragments thereof, and amino acid sequences having not more than 22 amino acid substitutions, additions or deletions relative to the amino acid sequence selected from SEQ ID NO: 9, 10, 11, and 16, and enzymatically active fragments thereof.
