1. A food safe tracer composition, the composition comprising:
(i) a food safe fluorescent molecule which fluoresces when exposed to an excitation wavelength, and thereby emits a photon with a wavelength between 400 and 600 nm,
wherein the food safe fluorescent molecule is a compound of formula (I):

wherein each of R1 to R8 is independently hydrogen or a C1-5 alkyl, or a salt and/or solvate thereof;
(ii) a stabilizing agent configured to improve the photostability of the fluorescent molecule, wherein the stabilizing agent comprises thiosulfuric acid or a salt and/or solvate thereof or a compound of formula (II):

wherein each of R9 to R12 is independently hydrogen or a C1-5 alkyl or a salt and/or solvate thereof; and
(iii) a gelling agent, wherein the gelling agent comprises a saccharide and an alcohol, and the weight ratio of the saccharide to the alcohol is between 1:10 and 10:1.
