1. A method for synthesizing rebaudioside W from rebaudioside V, the method comprising: preparing a reaction mixture comprising:
(a) rebaudioside V,
(b) substrates selected from the group consisting of sucrose, uridine diphosphate (UDP) and uridine diphosphate-glucose (UDP-glucose),
(c) a UDP-glycosyltransferase comprising an amino acid sequence that is at least 85% identical to the amino acid sequence of SEQ ID NO: 1; and
incubating the reaction mixture for a sufficient time to produce rebaudioside W, wherein a glucose is covalently coupled to the rebaudioside V to produce rebaudioside W.
