1. A method or controlling an amount of an anionic contaminant in a stream of a sugar processing system, the method comprising:
determining an amount of the anionic contaminant in the stream using a fluorescence parameter of the anionic contaminant, the anionic contaminant selected from at least one of the group consisting of lignin, a lignin by-product, tannin, and a tannin by-product; and
controlling an amount of the anionic contaminant in the stream based on the determined amount of the anionic contaminant in the stream.
