1. A product made by
a process for manufacturing a plurality of products from chia seeds comprising the steps of:
a. soaking chia seeds in about 10 to 20 volumes of water for a period of time;
b. sonicating soaked chia seeds using 75% power input for about 5 minutes at an elevated temperature to afford a mixture;
c. separating chia seeds from said mixture by vacuum filtration to afford a solution, which is lyophilized to afford a mucilage product of chia seeds, a soluble fiber product;
d. drying mucilage-removed chia seeds;
e. extracting oil from dried chia seeds at an elevated temperature to afford an oil product and a flour of defatted chia seeds,
wherein said product is an oil of chia seeds, a mucilage of chia seeds, a soluble fiber product, or a soluble protein hydrolysate, wherein said soluble protein hydrolysate comprises a peptide, a salt, a derivative or a fragment thereof, having a sequence of SEQ ID NO: 1, 2, 3, 4, 5, 6, 7, or 8.
