1. A method of producing Compound I:

OG Complex Work Unit Chemistry
comprising contacting a fruit or vegetable juice or extract comprising a diacylated anthocyanin with a carboxylesterase, wherein the carboxylesterase selectively hydrolyzes the diacylated anthocyanin to produce Compound I.
