1. A method, comprising:
contacting pyruvate and HO—CH2—CH2—CHO (3-hydroxy propanal) with a polypeptide having the sequence of SEQ ID NO: 27 so that HO—CH2—CH2—CH═CH—C(O)—COOH (6-hydroxy-2-oxo-3-hexenoic acid) or a salt thereof is produced.
