1. A composition comprising an ether- or ester-derivative of a graft copolymer, wherein said graft copolymer comprises:
(i) a backbone comprising a dextran, wherein the weight-average degree of polymerization (DPw) of the backbone is 10 to 500, and
(ii) one or more alpha-1,3-glucan side chains comprising at least about 50% alpha-1,3 glycosidic linkages.
