A nucleic acid encoding a protein, wherein the amino acid sequence of the protein is a variant of SEQ ID NO: 6 selected from the group consisting of SEQ ID NOS:16, 18, 40, 42, 44, 46, 48, 50, 52, 54, 56, 58, 60, 62, 64, 66, 68, 70, 72, 74, 76, 78, 80, 82, 84, 86, 88, 90, 92, 94, 96, 98, and 100 wherein said variant protein exhibits higher catalytic activity in converting fructose to allulose than the protein according to SEQ ID NO:6.
